In this research; the effects of different drying methods (spray and vacuum), carrier material types (maltodextrin, gum Arabic, and whey protein isolates), and ratios (50, 75, and 100% of honey weight) on the production and some properties of honey-like powder were investigated to produce a bioactive honey-like powder. Some properties of produced honey-like powder samples (particle size-morphology, tapped bulk density, hygroscopicity, solubility, diastase number, hydroxymethylfurfural content, antioxidant activity, and others) were determined. The samples produced by the vacuum drying method had a higher yield (90.95%), tapped bulk density (0.72 g/cm(3)), water content and activity (5.03% and 0.32), diastase number (10.30), HMF content (13.05 mg/kg) and antioxidant activity (14.83 mu mol TE/g) but lower particle size (92.61 mu m) and hygroscopicity (14.56%). The high diastase number (10.48-13.76) and antioxidant activity (7.87-30.17 mu mol TE/g) values and low HMF content (10.12-6.43 mg/kg) were determined in honey-like powders containing gum Arabic and whey protein.
