Enek Pekmez Production from Juniper “Fruits” by Native People on the Taurus Mountains in Southern Turkey.—Pekmez, a common and popular food in southern Turkey, is a fruit concentrate usually extracted from grapes (Vitis vinifera L.), fig (Ficus carica L.), mulberry (Morus alba L., M. nigra L.), and carob trees (Ceratonia siliqua L.). It also has been produced locally from the berry-like, fleshy cones of the enek tree (Juniperus drupacea Labill.). Pekmez has a high-energy content and is mainly consumed in the winter months. This note describes the production and use of enek pekmez by the native people in southwestern Turkey.
