Pomegranate fruit has gained worldwide popularity as a functional food and nutraceutical source especially during the last decade. So, research activities on pomegranate fruit has accelerated and mainly focused on the application of new postharvest technologies to extend the storage period and maintain the quality. Management of temperature, relative humidity, and atmospheric composition affect the postharvest quality of this nutritious fruit and reduce water loss, preserve marketing quality, and minimize the physiological disorders and fungal decays. Modified atmosphere packaging and controlled atmosphere storage maintain postharvest quality and reduce postharvest losses during long term storage of pomegranates. This chapter summarizes the postharvest technology of pomegranate fruit in relation to maintaining their quality between harvest and consumption.
